Skarpia Toast
the easiest bread that a girl can make
One of my Grandma’s infamous creations inspired by our Scandinavian roots. I have truly never seen these anywhere else in the world & I’ve even tried Googling it to find it’s origins which don’t seem to exist. So, I’m deeming this an Anderson original. To best describe it, this hard toast is somewhat dense with light hints of cardamom peeking through with each bite. These are best enjoyed in the morning with a cup of coffee - yum!
What you’ll need:
3 eggs
1 1/2 cups sugar
1 cup melted butter
1/2 cup half and half (or cream)
5 1/4 cup flour
2 tsp baking powder
1 tsp cardamom
What to do:
Beat eggs, add butter, sugar and cream
Beat in flour, baking powder and cardamom
Take dough and roll into 4 equal sized balls
Roll out the balls into 4 loaves that are roughly 10 inches long x 3 inches wide
They won’t expand much so they can be placed close on the pan
Bake 30-35 min at 350 F
Take pan out of the oven and slice loaves in 1/2-1 inch slices then lay slices on their sides
Bake again for 25 min (flipping halfway)
Take out, cool & enjoy!
Pro tip: store with a lid as the bread will harden after a couple days
