Peanut Butter Chocolate Chip Cookies

A REVAMP TO A CLASSIC that you never knew you needed.

Seriously though, these cookies have quickly become one of my family’s favorites. I have to start by saying I am not a huge fan of traditional peanut butter cookies, unpopular opinion I know. But honestly, there is something about hard PB cookies that turn me away. These however are amazingly soft and gooey. The bite of chocolate is also something that will catch you by surprise.

Peanut butter chocolate chip cookies

Ingredients:

  • 1/2 cup soft butter

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 3/4 cup peanut butter (creamy)

  • 1 egg

  • 1 tsp. vanilla

  • 1/2 tsp. baking soda

  • 1 1/4 cups flour

  • pinch of salt

  • 1 1/4 cup chocolate chips

What to do:

  • Mix (on medium speed) butter, sugars, peanut butter, egg & vanilla until creamy

  • Add baking soda, flour and salt until combined

  • Fold in the chocolate chips

  • Chill for 30+ min

  • Take out & roll into balls on parchment paper (much easier clean-up but not necessary)

  • Bake at 350 F for 9-10 min. No worries if they appear under-done.
